I don’t know about you, but I love pancakes. It doesn’t just have to be Shrove Tuesday (more commercially known as Pancake Day to me, you and the average joe) for me to be able to enjoy these tasty treats! Pancakes aren’t the healthiest meals going, but as it is the day for pancakes; Jack and I thought we should indulge in the real thing, rather than our usual concoction which we call banana pancakes (2 eggs, 1 banana). Today, I used Nigella Lawson’s Crêpe recipe… with a personal tweak. Check out the recipe page for the method, but I’ll provide you with the ingredients to help on your way to tasty pancakes. ASAP.
- 2 tablespoons of butter, melted (plus more for frying, but I used coconut oil to fry instead of overloading with butter)
- 1 cup of flour
- 1 1/3 cup of milk (I used almond milk)
- 1 large egg
- *optional* 1 tsp of cinnamon (another little addition of mine)
- Your favourite toppings of choice (jam/peanut butter/fruit/honey/lemon/sugar etc.)
